Goal: restructure gimbal_pymc/ into 6 subpackages.

• Deliverables: new folder structure, moved modules, updated imports, updated init.py re-exports, docs updates.
• Success criteria: “All existing examples and tests pass” + structure documented.
• Dependencies: mark it as blocking others (the plan recommends finishing P0 first).
