Vivek Wants a Updated Camera Show Down

Hi, I'm avid fan of this show.

Just a tidbit: When my wife and I are on trips (and have long distances to drive), we have 50:50 time on the music station. She listens to music, I put your show on. Now, my wife likes the show too!

I was working backwards from Show #84, now at #49. In that episode y'all had compared Blue Iris vs Shinobi. Are there any plans to redo your plans or are there any new suggestions? Thanks. Two weeks ago, our friends had a break in, and the Ring camera (battery operated), was laggy, and reported the intrusion, a few seconds (or minutes) too late. The cops showed up, but the burglars had obviously left. The one thing that the burglars did was undo the internet so they couldn't see what was going on.
1. Is there a way to improve latency? (PoE) Ethernet everywhere?
2. Is there a system that records locally, and has a local copy of the data so that even if the internet was down, it'll store something locally, and keeps x days worth of data, before cycling that content out.

Blue Iris comes with a caveat that it's a Windows only thing. They aren't technically savvy, but I live next door, and can help them out setup. But I'm looking for something that'll continue to be rock solid even when I move out.
