What is the problem this feature will solve?

Hi, I used uv to set up and build Astropy, made a virtual environment & installed all dependencies, and it's running totally fine and smooth now

However, I find that docs still don't mention uv-based setup instructions & workflows

I suggest adding this to the docs as soon as possible, which would be extremely beneficial, since more developers now are shifting to uv as it offers better dependency management & resolution than pip+venv+poetry

My current local setup:

• Fedora Linux, Kernel 6.17
• Python 3.13.2
• uv 0.10.6

Describe the desired outcome

To add uv-based setup and build instructions, so future contributors and developers of Astropy could easily find read-to-use instructions out of the box
