I know this is probably not the place to ask this sort of questions, so please let me know where would be a good place, but is the need for so much human interaction unavoidable? I'm asking because I am a happy user of f-droid (at least when updates are pushed reasonably quickly :P) and it is available to me I would like to help. I don't have a lot of human time to offer, but I implemented build automation in the past with so degree of success...

Thanks for the quick reply! May I ask what is the bottle neck for updates to be delivered faster? Is it just money to have more hardware to build things that is missing or is there something else?

A new K-9 version was released a while ago and the author did at least something to get it released in F-Droid, but it is still not available:
