Most couples are happy for us to source and add flowers to their cakes. However, we completely appreciate that you might want to use your preferred florist if you have really specific flowers or colours.

So what happens in this situation?

Options:

  1. Your florist can add the flowers to the cake themselves.
  2. Your florist can provide stems for us to cut, wrap, wire and add to the cake. These stems would need to be given to us the day before the wedding. This comes with an additional £20 fee for our time to do this.
  3. We can request the same flowers from our trusted florist and ask for similar styles and colours and we add the flowers.

Either option is fine with us, but here are some suggestions and recommendations from the point of view of a cake maker….

1. Flowers added by florists

These are a few of our cakes cakes which have flowers added by florists. We feel they have not been generous with the flowers, and they look very sparse and a bit underwhelming…..what do you think?

This is not a criticism of florists and the beautiful work they do and this does not happen every time. However, the florist may not have been told the size of the cake. They will not necessarily know the style or how many flowers to add.

If a florist is requested to add the flowers themselves, please note we have no control over the final look of the cake. Please read our statement at the bottom of the page for full details

2. Too much!

Some florists don’t give us stems, they pre-make posies to go on cakes, which are left at the venue for us to place on. This is great, there is no charge from us to add these for you, and the flowers are often beautiful. But… you get what you get. If the posy is huge and it looks too big, there is nothing we can do:

3. Your florist – our arrangement

Some florists do not like to add flowers to cakes. It is not their work and they do not wish to make an error that they are unable to fix. For this reason, some florists will provide stems for us to add to the cake. If for any reason you wish to use your florist, and they want us to add their flowers, this comes with a £20 fee for our time to cut, wrap and arrange these; and they must be brought to our shop the day before the wedding – we will not cut and arrange flowers at the venue.

4. Flowers added by us

Here are some cakes that we have sourced the flowers for and placed ourselves. We like to add full blooms with foliage to create drama to make the cakes look beautiful and luxurious.

We know how many tiers your cake is and how many flowers to order and know the best places to arrange them to look full and beautiful. If we make a mistake, we can fix it.

High Risk!

Question: What is wrong with the flowers on these cakes? They all look pretty…. but can you see it?

Answer: Gypsophila, also known as Baby’s Breath!

This is a popular floral filler — but it should never be placed on cakes.
Although widely used in bouquets, it is toxic if ingested, and therefore not considered food-safe in any form.

Unfortunately, we regularly see cakes online featuring gypsophila, and we’ve even had occasions where florists have placed it onto our cakes without realising the risks. This is extremely concerning, as it can cause illness if it comes into contact with edible parts of your cake.

To keep you and your guests safe, we do not use gypsophila on any of our cakes.
If you choose to work with your own florist for fresh flowers, we require all couples to sign a disclaimer. This is because once the cake has been handed over at the venue and other suppliers begin decorating it, we can no longer take responsibility for any non–food-safe items that may be added.

Your safety is always our priority, and we’re more than happy to recommend safe floral alternatives that look just as beautiful.

Your choice!

If you choose to use your own florist we are more than happy to accommodate. Many florists do a beautiful job and create really lovely posies. However, as this is something out of our control, we are not responsible for the final overall look of the cake if you choose to use your own florist.

Flower Statement

Quality Cake company supports couples’ decision to use their own florist for adding flowers to their wedding cake. If this is your option, we shall not be held responsible for any circumstances arising from the inclusion of flowers, added by parties other than ourselves, onto your wedding cake.

It is the responsibility of the florist to ensure that any flowers used are non-toxic and safe to be placed on the cake, making it suitable for consumption.

Most notably: –

Lily of The Valley, Ivy, Poinsettia, Azaleas, Gypsophila (babies- breath) Hyacinth, Daffodil, Oleander, Wisteria, Calla Lily, Rhododendron, Hydrangea, Mistletoe, Holly, Sweet Pea are all not suitable and pose a risk and should therefore not be used on a cake. 

Additionally, we shall not be held accountable for the cake’s final appearance or overall finished look when prepared or decorated by others.

If your florist is happy to prepare the flowers and adding them to the cake themselves, we will deliver the cake at a pre-agreed time, allowing the florist time to decorate the cake. Once we have delivered the cake, no further action is expected from Quality Cake Company.

If the florist would prefer to provide us with the flowers as stems and have Quality Cake Company prepare, cut, wire and add them to the cake, this comes with an additional £20 fee for our time to do this and the florist will need to deliver them to our shop the day before. We will not add flowers to the cake at the venue.

It can be quite challenging to make vehicles as they require a raised board to look more realistic. We recently made a VW campervan replica into a novelty cake, and we documented the process in a video.

Making a VW Campervan cake

To achieve the perfect cake:

  • Make a board and structure for the sponge to sit on (make sure it is food-safe)
  • Add layers of sponge and jam and buttercream and crumb coat it
  • Carve the cake using printout guides to help with the shape
  • Smooth the cake to create an even coating for the fondant
  • Cover the cake in fondant and add panels for windows etc
  • Add the final details such as wing mirrors
  • Add a beach effect to the cake board

How to make other vehicles from cake

Not making a campervan cake? No worries, you can use these same principles from this cake, to create any vehicle including:

Trying to decide on a design can be difficult especially if you’re not sure what everything means. Our cake jargon blog will outline some of the most used cake terms to simplify and help you understand the world of cakes.

Tiers

These are the number of cakes stacked on top of each other. The majority of wedding cakes have more than one tier. However, we regularly make birthday and other celebration cakes in two tiers or more. Ideal if you want a larger showpiece cake, or indeed more portions.

Layers

These are layers of sponge inside each cake. (Often confused with tiers). Although standard cakes have two layers of sponge, with a filling in the middle (e.g. jam and buttercream) most wedding cakes contain three layers of sponge. Generally, this gives a slightly larger portion and makes the cake taller. The more layers of sponge you add, the taller the cake becomes.

Buttercream

Buttercream is soft icing made from butter, sugar and other flavourings (such as vanilla, lemon or chocolate) it goes in between layers of sponge to hold them together. It is also the swirly bit at the top of cupcakes. In order to create a smooth finished cake it is also applied to the outside edge of the cake, underneath the fondant or sugarpaste. It can be used a as full cake covering, on semi-naked or ribbed buttercream cakes.

Sugarpaste

This is a soft white or coloured icing that is used to cover cakes. Sugarpaste can be super smooth or used to create textures as listed above. It is sometimes referred to as fondant, or simply icing. It has a very gentle vanilla flavour.

Dragees

Dragees are little balls made of sugar (like a boiled sweet) which are often coloured or given a metallic texture. Sometimes called sugar pearls. These are used to add a touch of sparkle to cakes and cupcakes.

Textures

Wedding cakes are a great opportunity to add some style and creativity to your cake to turn it into a piece of edible art. We can create textures using icing and other edible items such as cake lace, and isomalt. You can go for the clean modern look and keep it plain and elegant, or you can add some texture in the form of ruffles or quilting to the fondant to create patterns and illusions. Royal Icing

This is the traditional icing used to cover cakes, it was used on the Queen’s wedding cake. Royal icing is made of whisked egg whites and icing sugar. It dries very hard and is very sweet, we use it to “glue” things onto cakes as it acts as a great bonding agent, and it is used to pipe words or decorations, read more about Royal Icing here. Since the invention of sugarpaste however, it is now rarely used. It is difficult to work with, it is not as smooth and takes a lot longer to do. In summary, we do not use royal icing to cover our cakes, we use sugarpaste.

Airbrushing

A spray to add colour to cakes. It creates a soft finish and is used when you want to create an ombre finish. It can also be used for shading on our novelty and sculpted cakes.

Ombre

An ombre finish is the graduation of colour. Usually in one colour going from a darker to a lighter shade from bottom to top.

Cake Board

This is the board the cake is placed on. We sell these in the shop for home bakers in round, square and rectangles. These are either slim which are mostly used to place between tiered cakes for structure. Or around 1cm thick which is called a drum board. These are foil-covered boards made of compacted card. They can be covered in sugarpaste to match the cake or left as their original colour, silver or metallic. In some cases we incorporate the board design into the cake, making it look like metal, wooden flooring or grass. The wording is often added to the board, or additional decorations.

Cake Stand

These are a stand to place the cake on when it is going to be on display. The cake is still on a cake board, the stand is an optional extra. These can be a plinth stand, a tiered stand, a hoop or a pedestal. They give the cake height and grandeur or make an easy way to display cupcakes for your guests to grab and go. You can hire a variety of cake stands from us.

Figures

These are decorations made from sugarpaste in the form of humans, characters, animals or cartoons. These kinds of decorated elements are a skilled item to make that often take a lot of time and something a lot of cake makers cannot do.

Printed Images

These are images printed onto a very thin sheet of icing using a specialist printed using food colouring. They are completely edible and very useful in so many cake decorations that need to be very detailed, photographs or in the form of logos. Find out more about our edible printing service.

Cascade

This is when a decorative item, usually flowers, is applied to the cake starting on top of the cake, and literally cascading down the front. Her are examples with leaves, flowers and treats.

I’d better have a square cake – it’s easier than cutting a round cake.

This is the response we often get when we ask what shape cake our customer would like.

Which always perplexes us…how are you folks normally cutting a round cake?

We’re going to tell you a secret – our round cakes are made of exactly the same sponge as our square cakes!

Ok, let’s explain

When you get a slice of cake in a coffee shop, they serve a wedge of cake, a triangle shape, pizza slice or ‘Trivial Pursuit‘ piece if you will. So the thought of trying to cut a large round cake into 20 wedge shape portions is scary.

Party cakes are different

We’re not in the dessert cake business, we sell party cakes, which are served differently. Party cakes, regardless of shape or size, are cut into cubed-shaped portions.

Cutting a round cake is exactly the same as a square cake. We have put together a guide to show you how easy it is. We’ve even demonstrated this in a video!

Cake Cutting Guide

Step 1.

Remove all decorations from your cake including ribbons and toppers and dowels if it is a tiered cake.

We recommend using a serrated knife to cut.

Make sure you have a tray ready to serve.

Step 2.

From the curved edge make a straight cut across the cake from one side to the other. We use the width of the knife to determine how wide to make the cut.

Lie the knife down flat on the top of the cake, with the blunt edge of the knife on the edge of the cake. Turn the knife upright and that is where to make the cut.

Step 3.

The number of complete cuts you make will depend on the size of the cake.

We work with one full slice at a time. For the purpose of this example, this is a larger slice from the middle of the cake.

Step 4.

Lie the full slice down flat onto a chopping board.

Again using the width of the knife as a guide, cut across the slice of cake into portions.

Step 5.

Repeat this action across the full slice, cutting the same distance each time to get equal portions.

Repeat this action across each full cake slice, until the whole cake has been portioned.

Step 6.

And there you have it, it’s a piece of cake! (pun intended!)

How big you cut the pieces is up to you, we base each piece being approx. 2×1 inch for 2-layer cakes or 1×1 inch square for a 3-layer cake.

So there you go, 6 steps, easy peasy. If you want a square cake, go for it, but please don’t tell us it’s because it is easier to cut!

This is one of the key questions we ask when booking a cake with us.

Knowing how many portions or servings you need will help us to determine the size of the cake, to make sure you have enough portions and avoid wastage.

We have created the guides below, but remember these are not set in stone and it will depend on how generous the server is!

Party / Celebration Cakes

Usually, party cakes are cut into 1-inch x 2-inch slices, which is a generous serving for a guest – this is sometimes known as a ‘dessert portion.’

Keep in mind that serving sizes may vary based on the occasion and the appetites of your guests.

The number of layers a cake has will also determine how many slices or servings you will get out of a cake too.

Wedding cakes

When it comes to wedding cake portions, there are a few things to consider. First, it’s essential to determine how many guests will be attending the wedding. Generally, a standard serving size is about 1 inch by 1 inch – often known as a ‘finger portion‘. If you’re having a large wedding, you may want to consider ordering a larger cake or additional sheet cakes to ensure that all guests can enjoy a slice.

Finally, don’t forget to consider the presentation of the cake – a beautifully decorated cake can serve as a stunning centrepiece for your reception. Browse our wedding cake galleries for inspiration.

Other factors to consider

Another great way to add more portions is to add some cupcakes to your order. Cupcakes are already perfectly proportioned for a single portion. from 6 to 100, we can add beautiful, tasty cupcakes to your order to get you more portions.
