Default TriggerMesh version in CLI configs changed from latest to v1.21.1
All create commands honor the --version argument that allows setting per-component image and CRD versions
Config file structure and initialization logic optimized and simplified
CRD fetching only happens when needed (first run or manual version change). CRD file request status is verified
Other minor updates caused by the changes above
